I mentioned making a banana cream pie with fresh blueberries in an older post.
Well, last night we got to sample this creamy, fresh, summer pie that took minutes to put together.
If you can't make this one soon, copy and paste the recipe into a document for the next time you need to bring a pie to a gathering. Best part? No crust to worry about. You can literally place whole vanilla wafers in the bottom of a deep dish pie plate and that's it. No crushing crackers, no messing with cracked crusts, and no dough rolling.
PLUS, the batter is totally edible (licking of the spoon required) and you don't have to turn the oven on!
It does have a little bit of a cheesecake flavor, which I adore.
Ingredients
- 6 oz. cream cheese
- 1 can (14 ounces) sweetened condensed milk
- 3/4 cup cold water
- 1 package (3.4 ounces) instant vanilla pudding mix
- 1 cup heavy whipping cream, whipped
- 2 medium bananas, cut into 1/4-inch slices
- 2 teaspoons lemon juice
- about 35 vanilla wafers
- 1 cup fresh blueberries
How-To:
- In a large bowl, beat cream cheese until smooth. Beat in the milk, water and pudding mix. Fold in whipped cream.
- In a resealable plastic bag, add bananas and lemon juice; toss until bananas are coated. Drain and discard lemon juice.
- Line an ungreased deep-dish 9-in. pie plate with vanilla wafers. Spread with half of the cream cheese mixture. Top with bananas and blueberries.
Spread with remaining cream cheese mixture. Refrigerate for 3 hours or until set. Refrigerate leftovers.
I made several changes to lighten this pie up. First, I used vanilla wafers that were 60% less fat than traditional wafers. Second, I used light cream cheese. I used FAT FREE condensed milk (totally still tasted fine!) I also used sugar free vanilla pudding. So those 4 steps make this less guilty. The only thing full fat was the heavy cream and you need that because it has to be creamy.
Also, TIA and TAMARA are back on tv with a reality show and one is pregnant and the other is getting married? I need to watch this. Sister, Sister! :)
